Vegetables are extremely easy to grow. There are so many different vegetables to choose from, and in the Northeast, we typically group them into “cold weather veggies” and “warm weather veggies.” Leafy vegetables such as lettuce, kale, cabbage, and spinach can be planted as soon as the soil can be worked (i.e. when the ground thaws). Other vegetables such as squash, peppers, corn, and green beans can be planted once the weather becomes warm overnight, typically late May or early June.
