This nutrient-packed salad takes only minutes to prepare using fresh organic kale straight from the garden. No cooking required!
1 to 2 cups of fresh curly kale from the garden, washed and destemmed
1 tablespoon of homemade minced dried orange peel (or substitute fresh orange juice)
1 tablespoon apple cider vinegar
1/2 tablespoon liquid aminos (or substitute soy sauce)
1/2 to 1 tablespoon fresh grated ginger (note: frozen ginger root is easier to grate to fine texture)
1/2 to 1 tablespoon raw honey
1 tablespoon olive oil
Add all of the ingredients in a large bowl and toss. For tender “fluffy” kale, lightly work the mixture through your fingers. For extremely tender kale, massage or knead similar to dough. Top with additional dried orange peel (optional). Serve immediately.
