A Veggie Burger That Doesn’t Come in Plastic or Get Processed Beyond Recognition

So what does a gardener do with zucchini that literally grows overnight? How do you find creative ways to eat all of those carrots from recycling carrot-top food waste? Here’s a quick and easy way to use nutritious vegetables and help save the environment at the same time.

Shred a large zucchini and some carrots. Mix with a whipped egg and bread crumbs. Press. Brown in a frying pan. Top with fresh cilantro from the garden. Enjoy!
